Crunchy Cutlets

Ingredients:

6 trimmed and slightly fattened lamb cutlets

1 tablespoon vegetable oil

1 lightly beaten egg

¾ cup breadcrumbs

30 gms crushed cornflakes

Method:

Put egg in a shallow dish. Place breadcrumbs and crushed cornflakes in a separate dish and mix to combine. Dip cutlets in egg, then in breadcrumb mixture to coat.

Heat oil in a frying pan over a medium heat until hot, fry cutlets for 2 minutes on each side or until cooked through and golden. (Serves 3)
